The onion pungency, why?

The biochemical process which takes place in the development of the flavor of the onion is generated by two chemical components (amino acid), sulfoxide mitelcisteína and sufóxido of propenilcisteína. The two precursors of taste and smell in the intact tissue are found in the cytoplasm of the cells and there are relatively stable, without smell.

When an onion is cut is the breakdown of the structure of their cells and flavor precursors are contacted with enzymes called alliinasas and oxygen as a trigger for the reactions. As a result there are two chemical reactions, consecutive.

At first, the enzyme controlling the reaction products occur primarily responsible for the pungency and other secondary substances such as pyruvic acid, alcohols, sugars and ammonium. In the second chemical reaction, there are high levels of volatile sulfur compounds, as a result of the different reactions of hydrolysis.

Therefore, cutting the bulbs, the volatile gas resulting from chemical reactions is extended in the air and reaches the eyes. By making eye contact with this gas is converted into sulfuric acid that irritates the nerves in your eyes, itch, and why the glands produce tears to dilute and defense as clean as it irritates.

By introducing the onion in your mouth, starts enzymatic reaction controlled by the aliinasa and hydrolysis reactions that occurs when you put the onion in contact with the saliva and mucous membranes of the mouth, creating a whole flavor and characteristic of itching the onion and then, once ingested, is the characteristic aftertaste of onion.

So that a part of this pungency is more related to the contents of sulfur compounds and part of the bulb with the sulfur content that can be generated during the hydrolysis in the mouth, mucous membranes and digestive tract.

Miguel Hernandez, "Lullaby of the Onion"

Born into a peasant family in Spain in 1910, Miguel Hernandez had little formal education but succeeded in publishing his first book of poems by age 23. Arrested several times for opposing Franco, he died at 31 of tuberculosis contracted in prison. In "Lullaby of the Onion," he reflects on the present condition of and future prospects for his baby son. The poem was written after he received a letter from his wife stating that she had only bread and onions to eat.

Today July 17 in the cradle of the Spanish gastronomy, San Sebastian (Spain), takes place in the Basque Brotherhood of Gastronomy a day dedicated to Aragon (Spain). The Slowfood cohabited of Donostia, Zaragoza and Huesca, as always with the considerable collaboration of the Basque Brotherhood of Gastronomy, they organize a presentation of the most significant products in Aragon: the sweet onion of "Fuentes de Ebro", the truffle, the saffron of Jiloca, the wines of the Somontano... next to a tasting with the most important paladins of the Aragon gastronomy: Carmelo Bosque: Boss of Kitchen of the Tavern "Lillas Pastia" of Huesca (a star Michelin) and Director of "La Granada de Zaragoza". Ivan Vilanova Bardají: Cook of the Restaurant "La Venta del Sotón" in Esquedas, Huesca, recently winning to the best prickle in Spain with a cover of ternasco tail. Today the news of TVAragon has make a report of the project of protected designation of origin sweet onion of "Fuentes de Ebro". I have spoken of the association ACEFUENTES, what can suppose for Fuentes of Ebro, the process that we are carrying out to get it and of their mild flavour.

The new campaign of onion of Fuentes of Ebro has already begin.
The first departures you began to start up and to harvest the it finishes week of June and from the day July 3 one can already enjoy in the markets and stores of sweet authentic onion of Fuentes of Ebro. The forecast for this campaign is that it will be an onion of gustatory excellent quality and an index first floor of mild flavour, when we have results of the analyses of the pyruvate rate of our onions we will give them to you to know.

Last 28/06/06 have finally hung our web in internet in which we want to give the importance that deserves to the sweet onion of Fuentes of Ebro.
